The Green Rocket Cookbook

Introducing... The Green Rocket Cookbook!

The Green Rocket Cookbook is a treasure trove of more than 80 tried and tested vegan recipes that have been developed with flavour at their core.

Written by Philip Pearce, chef owner of the Green Rocket café and restaurant in Bath, the book was created in response to popular demand from the many regular and long-term customers who have been asking Philip to share his recipes for years!

Elite sports nutritionist and author of The Plant-Based Power Plan TJ Waterfall has also endorsed the book, describing it as “a brilliant collection of plant-based meals that are sure-fire crowd-pleasers for vegans and meat-eaters alike. Be warned, from experience, that if you’re cooking these masterpieces for guests, they’ll be pestering you for the recipes afterwards!”

The book tells the story of how the business was established, and there’s also a handy glossary of more unusual or lesser-known ingredients that appear in some of the delicious plant-based dishes. Recipes are divided into chapters that reflect the restaurant’s menu, covering breakfasts, small and large plates, salads, vegan cheeses, homemade store cupboard staples from chilli sauces to chutneys, essentials like vegetable stocks, and irresistible desserts. You’ll find flavours and inspiration from all corners of the globe here – Thailand, Italy, India, Spain and the Middle East to name a few – and meals to cook for any occasion. Many of the recipes are also gluten-free, making the book even more accessible for a wide range of diets. No matter what your skill level, Philip’s recipes are easy to follow and designed to allow anyone to create restaurant-quality food at home.

Highlights include Vanilla Poached Rhubarb Porridge, Tandoori Mushrooms with Raita and Kachumber Salad, Authentic Thai Red Curry, a Mezze Plate complete with homemade hummus, falafel and pitta, Tempeh Caesar Salad, Macadamia Feta and Fermented Sriracha Hot Sauce. Complementing the savoury recipes is a varied selection of sweets from traditional (but veganised) Sticky Toffee Pudding to Raw Raspberry Cheesecake and indulgent Biscoff Amaretto Tiramisu.

The perfect gift for anyone who wants to take on a more plant-based diet and enjoys home cooking, The Green Rocket Cookbook is full of recipes to make again and again. Try something new, expand your culinary repertoire and impress your friends – whether they’re omnivores, flexitarian, vegetarian or vegan, this book is packed with flavourful dishes that will surprise and delight.

About the Author

Philip Pearce is the chef and owner of the Green Rocket, an award-winning café and restaurant in Bath that prides itself on using local produce and creating a relaxed, welcoming environment for guests. He has been vegan for 26 years and is a firm believer that vegan food doesn’t have to be bland or entirely health-focused. He is also passionate about animal welfare and the environment, and says there is no better feeling than a meat-eater leaving The Green Rocket content and happy to include less meat in their diet. Philip worked in Australia and New Zealand before returning to the UK to establish his own business in 2013, learning the trade and picking up authentic recipes on his travels, resulting in the diverse flavours on his menu which are reflected in his first book.

The Green Rocket Cookbook is a 192-page paperback and retails at £20. It will be available to pre-order from the Meze Publishing and Green Rocket online shops, as well as available to purchase from Waterstones.
